PROTEIN COFFEE MUFFINS

Each week I like to think of some delicious snacks to make to bring to work that also help that 3 PM slump. While I tend to enjoy another cup of coffee in the afternoon to make it until the end of the workday, I though it would be fun to create another form of an energy boost.

Thus the coffee muffins were born. 

While they have coffee in them, they sure do taste like chocolate. These muffins are the perfect filling afternoon snack that will give you that extra boost without any sugar crash.

Servings: 12

Ingredients:

  • 1/4 cup coconut sugar
  • 1/2 cup melted coconut oil
  • 2 eggs
  • 1 teaspoon ground coffee
  • 1 teaspoon vanilla extract
  • 1 scoop vanilla protein powder
  • 1/2 cup coffee flour
  • 1/3 cup coconut flour 
  • 1/2 cup chopped almonds

Filling:

  • 1/4 cup coconut sugar
  • 1 teaspoon ground coffee
  • 1/3 cup chopped almonds
  • 1 tablespoon melted coconut oil
  • 2 tablespoon coffee flour

Directions:

  1. Preheat your over to 350 degrees and line a muffin tin.
  2. Mix the coconut oil and coconut sugar. Then add in the eggs and vanilla.
  3. Next fold in the coffee ground and coffee flour. Then add in the coconut flour.
  4. Lastly, mix in the almonds.
  5. Make the filling- combine all the filling ingredients well.
  6. Fill the muffins line 1/4 way full. Then scoop in 1/2 teaspoon of the filling. Then top with another 1/4 cup of batter.
  7. Repeat with remaining muffins liners.
  8. Bake for 28 minutes and allow to cool full in pan.
