WE'VE GOT THE BEET, MARGARITA

It's finally starting to feel like spring in New York- maybe?

When its warm out and sunny long after work gets out, instead of having a warm and cozy dinner, a fresh margarita and some guac always sounds right. I mean who doesn't love a margarita with guac?

For my first marg of the season, I wanted to share something refreshing and bright- inspired by one of my favorite places to eat at- Babu Ji. While their original is great, I, of course, added my own little spin with a touch of jalapeno-I love a spicy drink. 

So here's to spring, warmer days, and a taste of the summer to come. 

Servings: 1 drink

Ingredients:

  • 1 oz mezcal
  • 1/2 oz Aperol
  • 1 oz tequila 
  • Juice of 1/2 lime
  • 2 slices of jalapeno
  • 1 teaspoon honey or agave
  • 4 oz fresh beet juice 

Directions:

  1. Muddle the jalapeno and lime juice together. 
  2. Add the mezcal, agave, tequila, and Aperol. 
  3. Shake well. 
  4. Pour over ice and top with beet juice.
  5. Enjoy!
