FLOURLESS ORANGE GINGER SWEET POTATO MUFFINS

FLOURLESS ORANGE GINGER SWEET POTATO MUFFINS

Last week I tried this Siggi’s ginger orange yogurt and totally fell in love. The flavor combination made me inspired to try and bake something with a similar profile. I’ve been meaning to bake up some fall-flavored muffins but wasn’t so into the typical pumpkin. Then AHA- these sweet potato muffins with orange and ginger came into my brain! I also wanted to bake something flourless and with less sugar as soon the cookie monster and I will be going sugar-free.

HONEY LAVENDER ICED LATTE

HONEY LAVENDER ICED LATTE

Last weekend, the cookie monster and I took a short trip down to Charleston to visit my mom. Aside from the heat, it was great to have a change of scenery that included swamps, beaches, some alligators and other interesting wildlife, lots of preppy clothes and cowboy boots (which I secretly adores), and of course good ole barbecue. We indulged in corn bread, smoked ribs, fried chicken, and some-game changing brioche apple stuffed French toast

MOCHA ALMOND CINNAMON ROLLS

MOCHA ALMOND CINNAMON ROLLS

Last week my cookie monster was sad, so I tried making cinnamon rolls. They came out ok, but in my book were an epic fail. The dough wouldn’t rise and the bottom was slightly crusty from baking in a pool of butter. I was then determined to make kick-ass cinnamon rolls for some baking redemption.

VANILLA CHIA FIG JAM

VANILLA CHIA FIG JAM

To start- yes, this is another Europe Eats inspired dish. While in Amsterdam, I enjoyed a fig jam over buckwheat toast with a dollop of cream. It was a perfect bite. I was inspired to re-create my own, but with a healthier spin. Since coming home, I have been on the smoothie kick (thanks to my new kitchen gadget of a ninja blender set!)

SAVORY MUSHROOM WAFFLES

SAVORY MUSHROOM WAFFLES

While not the most outright Patriotic themed recipe, it sure is a darn good one. But I’d like to argue Waffles are pretty ‘Merican due to there beloved place on menus at iconic diners. Aside from the red, white, and blue theme, this recipe was inspired by an incredible brunch I enjoyed at a restaurant called Peck 47 in Brussels.

DRUNKEN WHOLE WHEAT CINNAMON RAISIN BAGELS

DRUNKEN WHOLE WHEAT CINNAMON RAISIN BAGELS

With the spring comes many holidays, such as Passover. Wheat being a no-no, one must intake the most wheat he can before being prohibited from eating the holy grain. (Hence long lines at any good bagel institution- but don’t skip the lox!) Okay, I’ll set aside the drama (even though some do really feel this way), but for real who doesn’t want to eat a homemade bagel? I figured it would be a nice treat before eating Matzah while celebrating Passover.

HONEY WHOLE WHEAT BREAD

HONEY WHOLE WHEAT BREAD

Is it worth it, let me work it. I put my bread down, flip it and reverse it.

I remember as a little kid my mom always using her bread maker. Then one day the bread maker retired to the basement. But I have always loved the idea of making fresh bread. Maybe it’s the Jewish mom vibe where I feel I should be baking challah every week or maybe it's due to the baking bug I have.

VEGAN PUMPKIN MUFFINS

VEGAN PUMPKIN MUFFINS

Pumpkin and Thanksgiving seem to be synonyms with one another when thinking about turkey day as well as the fall season. When considering what I am thankful for this year, I’d like to start with being thankful for completing graduate school applications and once again having the time to bake. Of course I am always thankful for my family, health, and sometimes my boyfriend, but I think there are greater things to really be thankful for.

JUMBO VEGAN APPLE STREUSEL MUFFINS

JUMBO VEGAN APPLE STREUSEL MUFFINS

A few weeks ago I went apple picking- a seeming tradition for when the leaves begin to turn colors and the weather becomes crisp. But when I say apple picking, I mean going to the farm, buying a bag of apples, and spending more time looking at the wines the farm also produces. Of course picking up a bag of apples means making delectable apple dishes such as apple walnut pancakes or recipe crafting with vegan apple muffins. Going apple picking or apples in general always reminds me of a story my dad once told me.

CRUNCHY FRENCH TOAST WITH BOURBON BLACKBERRY SAUCE

CRUNCHY FRENCH TOAST WITH BOURBON BLACKBERRY SAUCE

I always enjoy brunch and have to say it is my favorite meal. I always crave breakfast food and especially love French toast. One morning I invited my friends over and decided to make brunch. It was a much-needed meal since the night before my boyfriend’s dog decided to eat the blinds in my apartment. Mischievous dog

CHOCOLATE CHIA BANANA BREAD

CHOCOLATE CHIA BANANA BREAD

Vegan baking round one.

This week I decided to finally commit and cook up a vegan recipe. Of course it was taste tested by my go to vegan friend- and approved. My vegan experience was of course an adventure, but so has been my past week. At my job at a Hebrew School we tie-dyed with the class. During the project I looked up to see a kid had squirted some of the dye across the table and hit another kid in the face.

JUMBO CRANBERRY ORANGE WHEAT GERM MUFFINS

JUMBO CRANBERRY ORANGE WHEAT GERM MUFFINS

Sometimes being a Psychology major is really interesting, and by interesting I mean entertaining. The other night in one of my lectures a comical situation arose- at least the class thought so. We were watching clips in class and attempting to diagnose the possible disorder displayed. One of the choices was Trichotillomania, or hair pulling disorder. A brave soul raised her hand and asked the TA if feeling gratification from pulling another's hair was also a disorder.

GREEK YOGURT CHOCOLATE CHIP MUFFINS

GREEK YOGURT CHOCOLATE CHIP MUFFINS

It is always a story when a friend turns 21. From waking up with  a mysterious nose bleeds, your face in a garbage can, or a wonder of how you got home and where that mark on your face is from, 21 leaves no room to not have a story after the night. This past week two of my housemates, one being my roommate, turned 21. This only meant double the trouble. From finding a stranded intoxicated friend on the front porch to a morning at the Emergency Room, I can only say the week has been eventful.

HONEY MAPLE NUT GRANOLA

HONEY MAPLE NUT GRANOLA

Even since I was a teen, I have been called a "granola" on multiple occasions. The most was when I began telling people about the colleges I was considering to apply to, and many of them were granola schools, where I, a granola girl would fit it. I am not sure whether it is my quirky nature or my love of dance and yoga that coined that name upon me, but regardless I love granola. Before work begins and I become fully accustomed to a real person's working hours, I decided to make some granola.
