LYCHEE HIBISCUS GIN SMASH

This past weekend my cousin came to visit from Nashville. She’s a foodie just like me (check out her blog and health coach business), so I knew I wanted to make us a fun cocktail to sip on before heading out for the night. As we were taking a walk we spotted some lychees at my local fruit stand- suddenly I had my drink inspiration. I love muddling fruit and mixing it with gin (one of my fav alcohols…along with whiskey and tequila), so I though lychee might me a fun way to mix it up. Usually I’ve had lychee in martinis and have not been a fan. But this drink is fruity and gives off some good summer vibes…and a nice buzz. The hibiscus tea base gives a nice floral tone to the drink while not being too sugary and overpowering the lychee. All in all everyone approved of this pregame cocktail, but ending the night with coconut tequila shots made me wake up exhausted and craving a bagel. (And I got one too- it was a win-win weekend.)

Ingredients

  • 2-3 lychee fruits smashed
  • 1/3 cup hibiscus tea, chilled
  • 1 1/5 oz of gin
  • 1 teaspoon of agave
  • ½ cup club soda or seltzer
  • Lime wedge for garnish

Instructions

  1. Peel the lychees and place them in your cup. Muddle them with the hibiscus tea. Then add in the gin, agave, and mix. Top with club soda and a squeeze of lime.
  2. Enjoy!
