TAHINI APPLE OVERNIGHT OATS

I’ve just finished the first week of my new job, and I can certainly say I’m exhausted.

The first week of work always feels like the first day of school – you have to scope out where/who to eat lunch with, develop relationships with your team and co-workers, navigate the bus or commute, and keep up your grades and work.

Each time I start a new journey, the anxiety of the unknown arises. Nerves of will I excel, will the outcome I want manifest, or did I make the right choice? The unknown and knew can be terrifying- and while I find those changes hard, I also embrace them because I know in the end or in a short learning curve time.

But when going through a chance or something new, having something constant and consistency provides comfort.

Servings: 2

Ingredients:

  • 1/2 cup gluten free rolled oats

  • 1 cup cinnamon apple coconut yogurt (or alternative 1 cup coconut yogurt with 2 tablespoons unsweetened applesauce and cinnamon)

  • 3 tablespoons chia seeds

  • 1/2 cup unsweetened almond milk

  • 2 tablespoons tahini, divided

  • 1 granny smith apple chopped

Directions:

  1. Combine the yogurt, oats, chia seeds, and milk in a bowl.

  2. Let the mix sit overnight.

  3. The next day, saute the apple with some cinnamon and let fully cool.

  4. Divide the overnight oats into two jars. Top each with tahini and half the apple

  5. Enjoy!
