I can’t say I am happier that this week is over. It was one of those weeks were it seemed everything went wrong. My dog kept eating my one plant that I have managed to keep alive for more than a month (uch), I watched parking authority give me a ticket as I was one minute over the meter (double uch), and I scrambled to finally finish my thesis (triple uch). Let’s just say many happy hours were attended this week. But on a brighter note, I am officially moving to NYC and I submitted my thesis. Yay’s all around!

I guess I could say this recipe, due to its green color could be my post St. Patty’s day treat, but it is also the start of spring. Nothing says the beginning of the blooming months like green- it’s a natural association. (Pun intended.) Although if your me, you associate spring with runny eyes, the inability to ever wear make-up or contacts, and constant red eye. I have terrible allergies and dread the spring months with their high pollen counts even if it means warm weather and wearing flip-flops.

  Confession- I am a total coffee addict. While currently trying to limit my daily caffeine intake to one cup, I would happily drink three cups of coffee. My recent kitchen addition of a coffee grinder only heightened my morning cup o’joe. I mean who doesn’t love watching milk (in my case almond milk) create those beautiful coffee swirls, especially in freshly ground and brewed coffee? But then there’s also iced coffee, with coffee ice cubes, sweet milk, and maybe a homemade flavored simple syrup.

It seems this week these brownie bites were the best thing to happen to me. The week started off promising- no class, no work, and all the time to grocery shop, cook and bake. I have to say I always have loved Chanukah. The holiday brings about the excitement of lights (even the Christmas ones!) and the house smelling of frying latkes. This weekend I went home to visit and my mom and siblings. Before leaving school I received an urgent text from my mother: "please get lactaid the blue kind- I'm out!"Being a wonderful daughter I trekked (on by that I mean the store that is on route to my house) to the grocery store to be her lactose free milk for her dairy hating stomach. As I was handing the casher my single dollar bills (don't get any ideas there...), I noticed one of the bills had "juicy titties" written on it. I could not contain my giggles, although the dewed-eyed cashier girl only gave me a blank stare as if I was insane. I would like to not think where my dollar has been but hope it only continues to make others laugh

This week I decided to finally commit and cook up a vegan recipe. Of course it was taste tested by my go to vegan friend- and approved. PISTACHIO DARK CHOCOLATE COOKIE STICKS

After arriving home from vacation, I soon found myself preparing for a blizzard. Naturally it only made sense to bake an absurd amount in order to occupy my time. I decided to make cookie sticks (in addition to cookies and mini cakes), but as in my new year's resolution, I wanted to make it without butter. According to my multiple taste testers, they came out great. Although having to shell my own pistachios, since no pre-shelled (for the lazy cook) could be found in stores, was not all too fun. Regardless, enjoy this sweet and a bit healthier treat to help stick to those resolutions.

As the holiday season approaches it is always nice to be thankful for what we have in our lives; it is important to focus on the good present rather that what is missing. For some holidays can be bittersweet- happy for the holly times or reminiscent of what used to be. I've been on a banana kick lately- maybe it is due to the lack of banana recipes on my blog or the fact I've celebrated my birthday for two weeks, and I am, of course, banana. My birthday festivities ranged from a surprise birthday party, to a nice dinner with my mom, to a small party with friends at school. Each had their special quirks and of course a banana theme- from an ice cream cake decorated with bananas to an apron decorated with the Hannah's Bananas logo.
